The secret to its remarkable flavour lies in the maturation process – it ripens for 25 months and becomes granular and crystallized as it ages. In addition to the sharp and aromatic finish, salt crystals give it a gritty and crumbly flavor that lingers on the palate. It goes best with red wine, especially Teran and Merlot, and is often served with honey, dry figs, walnuts, chestnuts and sage.
